Peaches! I just love the summer fruits in season and always try to include them to sweeten and brighten our salads.
The more creative the salad the better! This salad combines the sweet ripe peaches to add softness, juice and extra flavour to the purple cabbage.
Purple cabbage is such a brilliant anti-ageing and anti cancerous vegetable, rich in Anthocyanins that are powerful antioxidants protecting cells from damage. There’s also plenty of other nutrients in the greens and extra protein and essential fatty acids from the 3 different seeds.
Peachy Purple Salad
2 C spinach leaves
2 C rocket leaves
4-6 peaches (1 per person) quartered or diced
2 C purple cabbage shredded or fine sliced
1 C snow pea sprouts
1/4 C sunflower seeds (optional lightly toasted)
1/4 C sesame
1/4 C pumpkin (optional lightly toasted)
Handful of herbs (parsley or coriander)
Layer the above ingredients in order over a large platter.
Goji Lime Dressing
½ cup dried goji berries soaked in 1 cup fresh lime or orange juice
¼ cup balsamic vinegar or apple cider vinegar
3 t coconut sugar or raw honey
2 T Tamari sauce
1 tbsp fresh ginger, minced
1 cup water
Himalayan salt and ground black pepper to taste
Pinch Cayenne or chilli flakes (optional chilli taste)
Blend all the addressing ingredients until smooth.
Lightly splash over salad and pour remainder small jug for optional extras.
